Wow…..I can’t believe that lab is over. I was so nervous about the final and to my surprise it wasn’t so bad. I was very happy with what I presented. That is, except the crunchy rice. HAHA =] I kinda wanted fish, but the chicken situation didn’t go as bad as I thought it would. Maybe if I could redo it, I might have done a different starch. Now I’m nervous about the lecture final and it’s Thursday, ahhhhhh. Well now I can’t wait until baking lab.
Wow! Time has come and gone in this class. I can’t believe it’s almost over. After the team practical, I think I am half way ready for my final. I can’t wait, but I’m kinda scared and nervous. I hope I get fish because I felt comfortable with the trout. That is, except for tweezing out the pin bones.
Anyway, I don’t think that I am going to try and make speatzal in my final because that was a little disaster. Haha. I think that maybe I will do a rice or maybe a different variety of pasta. Who knows? I think that the only other think that I have to think about is my garnish. I don’t quite know what I am going to do about that.
Well, I guess I’ll see you Wednesday morning.
Although I do not eat a lot of red meat, I did enjoy most of the dishes we produced. The hanger steaks that we did on the grill we my favorite. I didn’t like that burgers as much. Mine was still raw in the middle when I took it off the first time. I think that they should have been a little smaller. I did like how we put them on english muffins, it was different. I didn’t get a chance to taste the ribs, but they smelt really good and everyone else said they were yummy!!!
Before lab, I had never tasted schnitzel. I really liked how it was thin and coated with the panko bread crumbs. Those bread crumbs make everything soooo delicious. Overall, I think that the lab went well. Except, for clean up. We got a little side tracked and almost ran out of time.
I am excited for the fish test, but a little nervous that I have 2 weeks off. I guess I’ll have to buy a round fish and practice my fillets.

Overall, I think that this lab was good with the exception of the fire drill. IT WAS COLD!!!!
My favorite soup that we made was the corn chowder. I thought it was delicious and hearty! I also liked the mushroom one as well. I didn’t try the split pea because I usually don’t like it and I didn’t have time to taste it. I didn’t realize that split pea starts mostly as a liquid and get thicker when blended. For some reason, I thought that split pea started thick. haha.
The salads were really yummy. I never knew how easy it was to make dressings, but now I do; therefore, I can make many different variations. I liked all of the options we had to chose from. It allowed us to add different elements to our salads like; crunchy, salty, sweet, and bold. I enjoyed the crackers that Jamie made, but I didn’t like the cheddar ones I made as much.
I was upset that the mussels weren’t good because they are yummy. I’ve eaten mussels a million times and they’ve never smelt like dirty feet, so I’m happy we didn’t eat them. hehe.
I’m looking forward to red meats and learning about how many different ways you can prepare it!
I thought that the round fish was better than the flat fish. To me, it tasted very different. I thought that it was easier to fillet the flat fish, but maybe because it was already scaled and gutted. Anyway, I thought that it was pretty cool how you could peel the skin off and you didn’t really have to fight with the knife.
I really liked the shrimp cocktail and the shrimp scampi, they were delicious. On the other hand, I didn’t like the scallops too much. The have a very strange texture, which I find unpleasant.
I wish that we would have gotten to do the salmon. Salmon is my favorite fish and I love it sooo much. Especially in SUSHI!!!!! Overall, I think that I liked the ways we prepared the round fish and its taste better than the flat fish.
I can’t wait for salad and soup!! There are so many possibilities.
I thought that cooking the fish was really exciting. I must say that I had never fabricated a fish before, I always had my dad do it. We go camping in the summer and go fishing off of our boat. In lab, I was the only person that said they fished, it was embarrassing!
On the other hand, the striped bass was delicious!!!! My favorite cooking method was the pan fried with the panko breadcrumbs. My second favorite was the sauteed fish with browned butter.
I never knew that fish sticks came almost “pre-cut” for you. Oh, and I also didn’t know that you had to cut out the gills so that the stock wasn’t gray. I thought that getting to cut out the guts of the fish was a great learning experience and pretty cool.
Is flat fish much different than flat fish?
I thought that this week of chicken was easier than last week; however, I liked the dry cooking methods better than the moist cooking methods. Don’t get me wrong, there were things this week that I did like and enjoy.
I didn’t like the poaching method. I think that when you poach chicken it looks yucky! Also, my groups didn’t really taste like too much. I also didn’t like the braising method. This method made the chicken look soggy, but it did taste good. I just think that the appearance was a turn off at first.
My favorite was the stewing!!!!!!! It was delicious. I can’t believe that the ingredients were so simple, I think I’m going to have to try to make it sometime. Oh, and en papioute (please, don’t mind the spelling) was really cool. I had never cooked anything that way and it was good.
I can’t wait until next week to start fish. I know we have to fabricate them, but do they come with the heads on? Ewww! =) ?
The first week of chicken went rather well, i think. I never had to take apart a chicken before, but it was pretty cool. I can’t believe that I cut the wing off at the wrong joint… Oops! Oh well, I will get another shot at it.
I really liked the marinade that my partner and I made. It was delicious!! I also liked the tenders, but who doesn’t? On the other hand, I didn’t really like the chicken wings or the sauce that we made. The sauce was pretty salty!
I can’t wait until next week to find out how many other ways you can cook chicken.
Okay, I am happy that the tourne situation is over. hahah.
I got myself all worried about the test, but it wasn’t as hard as I thought it would be. I thought that the hardest part was peeling the squash-it’s tough! Oh, the experiment with the bases and acid was cool. I didn’t know that cabbage could turn so teal and mushy.
I am excited about next week. I love chicken, but I haven’t ever cut one apart. I think it’s going to be strange and slimy. I have handled fish before and I know that the sound of bones crushing, gives me the chills. Anyway, I will have to get over it and I can’t wait.
I loved the pasta, but my stomach didn’t quite like the pasta sauce. It was very good; I just have really bad acid reflux. On a different note, there were many things that I learned about pasta and grains that I didn’t know before.
Lab was the first time that I ever made homemade pasta before. I thought that it was awesome, but breaking the well walls sure did make a mess. I guess you have to be ready for that anyways-everything makes a mess!!! The pasta machine was really cool and much easier than a crank one. I thought that the pasta was really good and it was cool to see how much pasta you could make out of our tiny balls of dough.
I thought that rice was mostly 1:1 (water to rice). I didn’t realize that there were so many different ratios. 1:1, 2:1, and even 4:1, it doesn’t really look like the tiny amount of rice we used could soak in soooo much liquid. My favorite was the risotto because it was very creamy and delicious!!!
With all of that said, I think that my favorite part of lab was Alex’s mistake with the barley. The risotto cakes were AWESOME!!!!!!!!!!!!
